Goji Bowl

Breakfast is my favourite meal. If i could eat breakfast foods all day, i would! This is a nice change from my usual green smoothie, and its full of good stuff! Goji berries are classed as a superfood, and are one of the most nutrient rich foodson earth, and are in particular considered to be one of the largest sources of antioxidants - which are beneficial for our vision, skin, heart, and totally necessary for overall good health!


Goji Bowl

1 big serving

  • 1tsp dehydrated coconut water*
  • 1/3 cup water
  • 2/3 cup goji berries 
  • 1/2 cup blueberries
  • 2 small ripe bananas
  • 2 handfuls of ice - maybe 5-8 cubes?
  1. Put all of your ingredients (except ice) into a blender - I used my high powered blender (Froothie) and blend until nice and smooth
  2. Add your ice to the blender and blend until smooth
  3. Pour your goji mixture into a bowl, or a jar, or whatever you like to eat out of!
  4. Don't worry if it seems a little thin for your liking, leave it a few minutes and it will magically form a kind of jelly consistency (because you are magic)
  5. Pile on your toppings and dig in!

*I used loving earth's coconut water powder, though you could easily just replace the water in this recipe with coconut water



Get creative with your toppings, i used a few things i found in the cupboard, options are things like:
- Nut butters
- Seeds
- Buckini's - my recipe is here
- Extra berries
- Bee pollen or raw honey (if you aren't a strict vegan)
- Nuts
- A drizzle of maple syrup, agave, or coconut nectar



I topped my Goji Bowl with Coconut Butter, Buckini's, some extra goji berries, blue berries, linseeds, pepitas and a drizzle of maple syrup.

Definitely a breakfast worth getting out of bed for!
